Caserta, Campania, Italy, April 16, 2016. The cassata in the photo, a typical Sicilian production, is adorned with candied fruit of three colors, green, orange and red on the white of the icing.
Every Sicilian city makes one or more variations of this famous cake.
The main ingredients are the soft sponge cake, the royal pasta or almond paste, the ricotta and the candied fruit.
The nuns of the Martorana Convent in Palermo are very famous and were the first to bake, according to an ancient story back in 1143, the almond paste by combining almond flour and honey.
